Bitter Delights from Assam

Tita Kerela Bhaji (তিতা কেৰেলা ভাজি) Main ingredient: Bitter gourd (kerela/karela). Description: Thinly sliced bitter gourd fried with mustard seeds, salt, and turmeric. Sometimes onions and potatoes are added.

Neem Begun Bhaji (নিম বেগুন ভাজি) Main ingredient: Neem leaves and eggplant. Description: Tender neem leaves are fried with brinjal. Served especially during spring for detox and immunity.

Khar With Tita Haak (খাৰ আৰু তিতা হাক) Main ingredient: Alkali (khar) and bitter greens. Description: The khar neutralizes the bitterness but retains the herb’s character. A classic first course in Assamese meals.

Tita Misa Maas (তিতা মিছা মাছ) Main ingredient: Small fish and bitter herbs. Description: A semi-liquid preparation of small fish boiled or fried with bitter leaves or gourds, sometimes spiced lightly.
