Activate the yeast: In a bowl, mix ¾ cup warm milk, ¼ cup granulated sugar and 2 ¼ tsp (1 packet) active dry yeast. Let it sit for 5–10 minutes until frothy.

Make the dough: Add 2 ½ cups all-purpose flour, 2 tbsp unsalted butter, 1 egg, and ½ tsp salt to yeast mixture. Knead for 5–7 minutes until smooth and elastic.

Let it rise: Place the dough in a greased bowl, cover, and let it rise in a warm spot for 1 hour or until doubled in size.

Shape the donuts: Roll out the dough to ½-inch thickness. Cut out donuts using a donut cutter or two round cutters (one big, one small for the center).

Second rise: Place the shaped donuts on a tray, cover loosely, and let them rise again for 30 minutes.

Fry and finish: Heat oil to 350°F (175°C). Fry donuts 1–2 minutes per side until golden brown. Drain on paper towels. Dust with sugar or dip in glaze/chocolate.
